Picking: It's more or less the same all the way through, just with a different bass string depending on the chord : 5'th for C and Am , 6'th) for G, Em and F (thumb on first fret) and D7 (thumb on second fret). There are tons of tabs of this song all over the web, and most I have seen are fairly accurate. When the basic picking pattern and the changes of chords are flowing, it's fairly easy to add the extra little tricks and melody line by lifting or adding a finger here and there.

HINT: It's easier to grip the F chord in this way, if you lay down your index finger to cover both the first and the second string (like a mini barét ), instead of holding it very perpendicular to the fret board as this guys does. It may be hard to cover both strings ( 1 and 2 ) at once the way it is show here. Also it's ok to keep the A-string open for variation, since A is also a note in the F-major chord. It actually sound better to my ears.

In the Talkin' Blues example, everything you say about strumming the chord, it seems like you only strum the first 3 or 4 strings. Is that correct or should we strum all the strings associated with the chord? (For example, 5th string hammer on the second fret, and then strum down on 5 through 1)?

How the fuck did your guys' strings break? You are absolutely retarded. You should be able to tune up a good 3-4 half steps and still be fine. That's how you stretch new strings when you first put them on in the first place.. Noobs.
