Actually there are two popular variations of chicken and dumplings. I grew up with 'drop dumplings' they're big round fluffy dough globs. That might be what you're used to. Then there is this noodle kind, "rolled dumplings'. In all my travels across the US, this tends to be the most common type. So really it's either or, but I had the same response when I first encountered these type of "dumplings"
